Soy-Ginger Chicken With Greens

Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch
- 2 tablespoons water
- 4 cups mixed greens (bok choy, spinach, or kale)
- 2 green onions, sliced
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together soy sauce, sesame oil, grated ginger, minced garlic, honey, and rice vinegar until well combined.
- Season the chicken breasts lightly with salt and pepper. Heat vegetable oil in a large skillet over medium-high heat.
- Add the chicken to the skillet and cook until golden brown on both sides and fully cooked through.
- Add the mixed greens to the skillet and sauté until wilted and tender.
- In a small cup, mix cornstarch with water, then stir it into the soy-ginger sauce mixture. Pour the sauce over the chicken and greens.
- Let the sauce simmer and thicken while coating the chicken and vegetables evenly.
- Sprinkle sliced green onions on top and serve warm with rice or noodles for a complete meal.
