Soy-Ginger Chicken With Greens

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 4 cups mixed greens (bok choy, spinach, or kale)
  • 2 green onions, sliced
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together soy sauce, sesame oil, grated ginger, minced garlic, honey, and rice vinegar until well combined.
  2. Season the chicken breasts lightly with salt and pepper. Heat vegetable oil in a large skillet over medium-high heat.
  3. Add the chicken to the skillet and cook until golden brown on both sides and fully cooked through.
  4. Add the mixed greens to the skillet and sauté until wilted and tender.
  5. In a small cup, mix cornstarch with water, then stir it into the soy-ginger sauce mixture. Pour the sauce over the chicken and greens.
  6. Let the sauce simmer and thicken while coating the chicken and vegetables evenly.
  7. Sprinkle sliced green onions on top and serve warm with rice or noodles for a complete meal.
