Healthy High Protein Chocolate Banana Cake

Ingredients

  • 4 ripe bananas (450 g)
  • 4 medium eggs
  • ¾ cup (200 g) greek yoghurt (0%)
  • ½ cup (50 g) cocoa powder
  • 2 tbsp (30 g) honey
  • 2 tsp baking powder

Instructions

  1. Preheat the oven to 180°C (360°F) and line a loaf tin with parchment paper.
  2. Peel the bananas and break them into chunks.
  3. Place the bananas, eggs, Greek yogurt, and honey into a blender and blend until smooth.
  4. Add cocoa powder and baking powder, then blend again until fully combined.
  5. Check that the batter is thick and glossy. If too thin, mix in a spoonful of oats to thicken it.
  6. Pour the batter into the prepared loaf tin and smooth out the top.
  7. Bake for 55–60 minutes until a toothpick inserted comes out with a few moist crumbs.
  8. Allow the cake to cool in the tin for 10 minutes, then transfer to a rack.
  9. Cut into 5 equal pieces.
  10. Store in an airtight container or freeze for later.
