Chicken Pan Fried Noodles

Ingredients

  • 2 cups cabbage, thinly sliced
  • 5 green onion stalks, white & green parts separated (whites halved, greens cut into 3-inch pieces)
  • 1 medium onion, thinly sliced
  • 1 medium carrot, peeled and cut into matchstick strips
  • 5 garlic cloves, finely minced
  • 1 pound fresh wheat noodles, par cooked (or egg noodles / cooked spaghetti)
  • 4 tablespoons cooking oil (divided)
  • 1 pound chicken thighs, cut into 1/4-inch slices
  • 2 tablespoons oyster sauce (for marinade)
  • 0.5 tablespoons soy sauce (for marinade)
  • 0.3 teaspoons black pepper (for marinade)
  • 0.3 teaspoons baking soda (for marinade)
  • 1.5 tablespoons soy sauce (for sauce)
  • 2 tablespoons dark soy sauce (for sauce)
  • 2 tablespoons oyster sauce (for sauce)
  • 1 tablespoon Shaoxing wine (for sauce)
  • 0.5 tablespoons sugar (for sauce)
  • 2 teaspoons sesame oil (for sauce + finishing)

Instructions

  1. Par boil 1 pound fresh wheat noodles for 1 minute (or cook until al dente for other noodle types). Strain and set aside.
  2. Combine 1 pound chicken thighs, cut into 1/4-inch slices with 2 tablespoons oyster sauce, 0.5 tablespoons soy sauce, 0.3 teaspoons black pepper, and 0.3 teaspoons baking soda. Mix well and marinate for 15 minutes.
  3. In a small bowl, combine 1.5 tablespoons soy sauce, 2 tablespoons dark soy sauce, 2 tablespoons oyster sauce, 1 tablespoon Shaoxing wine, and 0.5 tablespoons sugar. Mix well and set aside.
  4. Heat 2 tablespoons of cooking oil in a large wok over high heat. Sauté marinated chicken until cooked through, then remove from the pan and set aside.
  5. Add remaining 2 tablespoons of cooking oil to the wok. Sauté the white parts of green onion stalks until fragrant. Add 5 garlic cloves, finely minced and 1 medium onion, thinly sliced and sauté until onions are slightly translucent.
  6. Add 2 cups cabbage, thinly sliced and 1 medium carrot, peeled and cut into matchstick strips and sauté for 1–2 minutes. Add the par cooked noodles and cooked chicken, then pour the sauce over everything. Toss well and cook until the noodles absorb the sauce, about 3–4 minutes.
  7. Drizzle with 2 teaspoons sesame oil and add the green parts of green onion stalks. Give everything one final toss. Serve and enjoy!
